Blueberry Buckle
Ingredients
BATTER
1/2 cup milk
1/4 cup butter
2 eggs
3/4 cup sugar
2 cups self-rising flour*
2 cups blueberries
*If using all-purpose flour, be sure to add 1/2 tsp. salt and 2 tsp. baking powder or the batter will not rise.
TOPPING
1/3 cup sugar
1/2 cup all-purpose flour
1 1/2 tsp. cinnamon
1/4 cup butter
Non-stick cooking spray
Instructions
Wash and dry the blueberries, removing any stems.
Batter: In a bowl, blend the milk, butter, eggs and sugar together. Gradually add the flour, mixing well. Using a spoon or spatula, fold the blueberries into batter. Spread batter into a 9-inch square pan sprayed with non-stick cooking spray. Set aside.
Topping: In a small bowl, using a fork, combine the topping ingredients. Sprinkle topping over the batter.
Bake at 350 degrees for 45 minutes or until an inserted toothpick comes out clean.
Yields: 8 servings
